About Kelsey

Hey there!  I’m Kelsey, the cook, baker, writer, and photographer behind Apple a Day.  By day, I’m a district coordinator, supporting gifted and advanced learners and the teachers who work with them.  I love helping unravel the social, emotional, and intellectual complexities that make gifted kids so unique and so fascinating.  If we ever meet in person, you might want to be careful asking me about my career…unless you really really want to talk about gifted kids.  I could and will go on and on. 

I started this blog in January 2008.  I was newly single and finding myself with all kinds of time on my hands.  Refusing to relegate myself to a new life of frozen meals, pre-packaged kits, and single girl takeout, I did what my mom taught me and got into the kitchen.  What happened next is documented on this blog–I went from a girl who didn’t mind cooking simple meals to a woman who loved to cook (and bake!).  I fell in love with real ingredients, dishes made from scratch, and the satisfying feeling of watching those you love enjoying something made with love.  Somewhere along the way, I found myself, my confidence, and real, true joy.  It doesn’t get much better than that! 

I hope my little corner of the blogosphere will inspire you to do the same.  I’m so glad you’re all on this kitchen adventure with me!

    Kelsey, I have four children (all grown) and from that 12 grandchildren. My husband and I live within walking distance of Coors Field, home of the Colorado Rockies! Everyone loves the soft and chewy chocolate chip cookies! I took some to the baseball game and gave them away! The grandkids love them and my husband and his office said they were the best ever! Thank you for this wonderful recipe! The secret is in the corn starch! Thanks again. Nettie
