When I started my Meatless Monday posts three years ago, I wasn’t really sure how long I’d stick with it. For multiple reasons–nutritional, economical, and ecological–I wanted to commit to cooking one vegetarian meal per week. In a very short amount of time, I found myself eating approximately half my meals without meat and feeling healthier and happier than before. I’m a convert, for sure. So here I am, sharing yet another Meatless Monday yearly round up. I wouldn’t have it any other way.
The tenth most popular Meatless Monday recipe from last year was one I really, really loved. This green chile chowder was so hearty and spicy, it would warm anyone up on the coldest of winter days.
Everyone seems to have their favorite comfort foods and mashed potatoes are definitely on my list–specifically, the garlic Yukon Gold mashed potatoes I made back in February. They were fluffy and flavorful and so, so perfect.
Next up was my take on a spring classic. By replacing the pasta, my quinoa primavera got a makeover and a healthy dose of protein. This recipe was fantastic the day I made it and even better as lunches during the week.
Apparently, 2013 was the year of quinoa for me. The seventh most poplar dish of the year was this quinoa salad with arugula, goat cheese, and white beans. It was light and filling an fll of bright, punchy flavors.
Perfectly ripe summer tomatoes are tough to beat. But when they’re slowly roasted and included in a caprese salad, the results are out of this world good. Truly. I could eat this salad every single day all summer long.
I have a plethora of soup recipes on this blog, but I can honestly this lentil soup with cauliflower and Gruyére is one of my absolute favorites. It’s hearty and filling with just the right touch of nutty richness from all that irresistibly gooey melted cheese.
Swiss eggs aren’t traditionally vegetarian fare. But when I made mine, I left the ham on the side for an easily meatless brunch option that’s sure to please a crowd of any size.
In third place for the year was a meal I’m already dreaming about for this summer–squash and corn tacos. They’re easy, uber healthy, and packed with some of summer’s best produce. Of course, the squash mixture makes for great tacos, but it’s also great on a salad, with eggs, or even on its own.
Up next–you guessed it–more quinoa. From the moment I found the recipe for this peanut butter-apple quinoa, I knew I’d love it and I had a pretty good idea you would, too. With just a handful of ingredients–apples, peanut butter, honey, cinnamon, and quinoa–it hit the mark on every possible level.
Finally, the top meatless recipe of the year–oatmeal smoothies. I have to say, its popularity surprised me. I knew y’all liked smoothies, but I had no idea you liked them this much! I’m glad this one was a winner. I hope I can post recipes you love this much in 2014!
