As I mentioned in my November Favorite Things post, I am pretty much obsessed with my Cuisinart Multicooker. Slow cooker meals get a bad rap, but they can be very, very good. Tender meat and veggies with minimal effort. On a long, busy day, what’s not to love?
This recipe is the epitome of an easy slow cooker meal. Everything is prepped the night before, then thrown in the slow cooker in the morning. Right before meal time, all yo’ll need to do is make some rice and chop a little green onion for garnish. We steamed a little broccoli on the side for more veggie power and voilá! Dinner was served.
Slow Cooker Hoisin Beef Stew

2/3 c. low-sodium beef broth
1 (7 oz.) bottle hoisin sauce
1-2 tsp. hot sauce (I used Sriracha)
5 cloves garlic, minced or pressed
1 in. piece of ginger, peeled and grated
1 1/2 lbs. cubed stew meat
3 stalks celery, cut into large slices
3 carrots, peeled and cut into large slices
1 large onion, thinly sliced
2 TBSP chopped green onion
2 TBSP toasted sesame seeds
steamed rice and broccoli for serving, if desired
1. In a large bowl, whisk together broth, hoisin, hot sauce, garlic, and ginger. Add meat, celery, carrots, and onion and toss to coat. Cover and refrigerate overnight.
2. Transfer all ingredients to a slow cooker and cook on low for 8 hours.
3. To serve, ladle over rice and garnish with green onion and sesame seeds. Serve broccoli alongside, if desired.
