This time of year, I really start craving warm breakfasts. As much as I love my yogurt and granola, chilly mornings just never seem right without oatmeal, eggs, or something to warm my belly and keep me going until lunch. I’ve got a breakfast quinoa recipe I love, but I haven’t made it in a little while.
This recipe certainly lived up to my expectations. It was every bit as warm, hearty, and filling as I was hoping, but it had an extra layer of flavor from peanut butter and honey–a heavenly flavor combination, if you ask me. With a healthy dose of cinnamon and a smattering of bright, fresh honeycrisp apples, I really couldn’t ask for more. My mind is already racing with so many other possibilities–banana instead of apple, almond butter with peaches and cherries, and so many more.
Peanut Butter-Apple Breakfast Quinoa

Ingredients:
1 c. red or white quinoa, rinsed
2 c. water
1/3 c. peanut butter
2 TBSP honey, plus more for drizzling
1/2 tsp. ground cinnamon, plus more for sprinkling
1 large or 2 small honeycrisp apples, cut into bite-sized chunks
Directions:
1. In a large saucepan, bring quinoa and water to a boil. Reduce heat to low, then cover and simmer until quinoa is tender and tails come out, about 15-20 minutes.
2. Remove quinoa from heat. Stir in peanut butter, honey, and cinnamon. Top with apples, then drizzle with additional honey and sprinkle with cinnamon. Serve immediately.
Yields: 4 servings
