Do you know Erin? If you don’t, I’m so happy to introduce you to her. In short, she’s a talented cook, photographer, and blogger at Erin’s Food Files, a conscientious citizen of Nashville, her adopted hometown, a bourbon lover, just like me. She’s also a new mom to one of the cutest baby boys you’ll ever see.
Erin has recently returned back to work and she’s asked a few blogging friends to help her out with some guest posts while she and her family catch their bearings and figure out their new routine. I was so excited Erin thought of me and completely honored once I saw the list of other bloggers. Seriously, people. I don’t know how on Earth Erin even thought to put me in the same category.
But here I am–humbled, honored, and hungry for more of this baked penne with zucchini, corn, and basil. Seriously guys, it’s one tasty way to take advantage of all that end of summer produce; a perfect use of the mountains of zucchini, corn, basil, and tomatoes we’ve got in our gardens, CSA boxes, and farmer’s markets. M and I both loved it. I’m certain Erin’s family and yours will, as well. So what are you waiting for? Click here to get the recipe over on Erin’s blog!
So you and Erin need to join up with me, Kira, and Cate whenever Cate and I ever manage to make it out there for the Bourbon Trail vacation we will one day take.
That Girl, you got it! Sounds like heaven to me!
Thank you again for guest-posting for me! This looks scrumptious. And it really was a huge help to me to have you provide some content for my blog. :)PS. Can you believe I'm a born & bred Kentuckian who has never done the bourbon trail?! (in response to "That Girl"'s comment.)
