On my days off, I’m a sucker for lengthy, complicated, and impressive-looking meals. During the week, my cooking style can go quite the other way. By the time I get home, I’m usually pretty tired and hungry. I want something healthy and quick like this citrus salmon served with an equally healthy chickpea and spinach salad. With just a handful of ingredients, you can have this on the table in no time at all!
Simple Citrus Salmon

4 (6 oz.) salmon filets, skin off
2 TBSP olive oil salt and pepper, to taste
1 orange, cut into thin rounds
2 lemons, one cut into thin rounds
2 TBSP chopped fresh mint
Directions:
1. Preheat oven to 350 degrees. Place salmon in a foil-lined baking dish.
2. Drizzle oil over salmon, then salt and pepper to your taste. Lay citrus rounds over the filets, overlapping them and alternating lemon and orange slices. 3. Place salmon in the oven and bake for about 16 minutes, or until salmon is firm and opaque. 4. When salmon is done, remove from oven and squeeze juice of remaining lemon over the filets. I bought salmon and local lemons at the market in Ortigia, Sicily this morning and plan to serve it topped with a splash of fresh blood orange juice. We seem to be on the same page.
Nice job! I love cooking salmon this way. Or, for an Asian flair, sprinkling it with a little soy sauce and ginger and baking it with sliced lime.

I love salmon fillets for a quick weeknight meal. It's such an easy way to eat fish. I love my salmon with Chinese spices and soy, but this citrus version looks great too!
