Vanilla Kipferl (Austrian Almond Cookies)

When I was researching recipes for cookies to bring to my school’s staff retreat, I remembered that my mom had made me some vanilla sugar. It had been sitting for two weeks and it was ready to go. So away I went to allrecipes.comto use their fantastic ingredient tool. If you’ve never heard of it, it’s great. You can type in the ingredients you have on hand or want to use and up come several recipes you can make!

Vanilla Kipferl (Austrian Almond Cookies)
adapted from allrecipes.comIngredients:2 1/8 c. all-purpose flour1 pinch salt7/8 c. butter1/2 c. confectioners’ sugar1 egg4 tsp. vanilla sugar (plus more for dusting)1 1/4 c. ground almondsDirections:1. Whisk together flour and salt in the bowl of a stand mixer. (Whisk by hand, not with the attachment.)2. Lock bowl into stand mixer fitted with the paddle attachment. Mix in butter, starting at a low speed and increasing to medium.3. While the mixer is going, add in the confectioners’ sugar, egg, vanilla sugar, and ground almonds. Refrigerate the dough for 30 minutes.4. Preheat oven to 400 degrees.5. Roll dough into 1 inch balls and place on a cookie sheet covered with a parchment paper or a silicone baking mat. (These cookies are traditionally shaped into 1 inch crescents, but I was in a hurry!)6. Bake for 11 to 13 minutes depending on how crunchy you’d like the cookies to be. The cookies will not brown very much.7. While still warm, roll in vanilla sugar.

    These look amazing! I've never heard of vanilla sugar before. You just keep some vanilla beans in sugar I guess?
